Brewed in the early Winter of 2019. Cooled in the night air of our handmade copper koelschip, situated in a beautiful barn in Chester County, PA. Entirely spontaneously fermented and aged in freshly emptied wine puncheons for one year. I then transferred this blend into two new puncheons containing a combined total of one ton of local yellow peaches for an additional year. Bottled in 2022. Notes of fruit filled gummi peach rings, soft sauv blanc grape must and Peach Melba. 7%
